New Summertime Recipe

Are you looking for a new favorite summer meal?

Look no farther! Have I got the post for you.

Not only is it SO easy to make, it's very healthy. AND it tastes delicious. I could seriously eat it every day (and I practically have been.)

OK.

You make a pot of quinoa. I tried it with 1 part Q to 1.5 parts water to make the quinoa "pop" in my mouth, and LOVED it that way. (as opposed to 2 parts water per my directions on package)

Then chill the quinoa in the fridge until you're ready to eat it, or you can eat it warm too. But I like it better cold.

When you're ready to eat it, add chopped cucumber (a lot), sunflower seeds (a lot), slivered almonds (a lot), raisins (a handful), and a little olive oil and sea salt.

Don't let the raisins throw you. You can definitely eat it without them, but even if you don't like raisins so much (like me) give it a try. I'm not normally super fond of them, but I think the raisins add great texture and sweetness without making it too...raisiney.

It is so delicious. You have to try it.

See, my husband doesn't like it so much. And I L-O-V-E it. My kids will eat it for me, but they don't quite get my passion for it either.
