Are you looking for a new favorite summer meal?
Look no farther! Have I got the post for you.
Not only is it SO easy to make, it's very healthy. AND it tastes delicious. I could seriously eat it every day (and I practically have been.)
OK.
You make a pot of quinoa. I tried it with 1 part Q to 1.5 parts water to make the quinoa "pop" in my mouth, and LOVED it that way. (as opposed to 2 parts water per my directions on package)
Then chill the quinoa in the fridge until you're ready to eat it, or you can eat it warm too. But I like it better cold.
When you're ready to eat it, add chopped cucumber (a lot), sunflower seeds (a lot), slivered almonds (a lot), raisins (a handful), and a little olive oil and sea salt.
Don't let the raisins throw you. You can definitely eat it without them, but even if you don't like raisins so much (like me) give it a try. I'm not normally super fond of them, but I think the raisins add great texture and sweetness without making it too...raisiney.
It is so delicious. You have to try it.

See, my husband doesn't like it so much. And I L-O-V-E it. My kids will eat it for me, but they don't quite get my passion for it either.

thanks! i will try this, but i haven't been impressed with quinoa yet, but maybe if i change the ratio i will like it more!

1 1/3 C quinoa made in 2 C broth + 2T balsamic vinegar + 2T olive oil + 1.5 C halved green grapes+2 C shredded cooked chicken+1/2 C toasted slivered almonds = yummy!
Or, Dave's favorite: Saute 1 chopped onion and 3 cloves of garlic in olive oil Ad 3/4 C uncooked quinoa and 1.5 C of broth, season with 1 t cumin, 1/4 t cayenne pepper and salt/pepper to taste. Boil, cover, reduce heat, simmer for 20 minutes. Add 1 C frozen corn and simmer 5 more minutes. Mix in 2 15-oz cans of rinsed black beans (though I usually only use one) and 1/2 cup of chopped fresh cilantro. Yum.

I’m impressed, I need to say. Truly seldom do I encounter a blog that is each educative and entertaining, and let me tell you, you have hit the nail on the head. Your notion is outstanding; the issue is a thing that not adequate individuals are speaking intelligently about. I am really happy that I stumbled across this in my search for some thing relating to this.
